Australia switching to decimal currency in 1963 saw the end of the days of the hot Christmas pudding with a sixpence hidden inside as a secret treasure.

Gone too are the days of the formal dining room as the current trend is for the kitchen to be the heart of the home, where we eat, play and enjoy life together.

Heat Free Aussie style Christmas pudding.

Here it is, no hot cooking, it’s an ice cream creation and it tastes as good as it looks.

Here’s the recipe.

Aussie Style Christmas Pudding

Ingredients:     

  • 2 litres vanilla ice-cream
  • 300 mls cream
  • 250 g red glazed cherries (chopped)
  • 250 g slivered almonds
  • 1 cup sultanas
  • 1 tablespoon orange juice
  • 100 g dark chocolate
  • 1 ½ tablespoons Bitton Gourmet Orange Jelly
  • 6 Jaffas
  • Flexible non-stick Christmas tree mould

Method

  • Stand sultanas in orange juice for ½ hour.
  • Melt chocolate on Kleenmaid induction cook top on level 4 until melted.
  • Mix the chocolate, sultanas, cherries, almonds and Bitton’s orange jelly together.
  • Soften the ice-cream by standing the ice-cream container in hot water for a few minutes.
  • Mix softened ice-cream and chocolate mixture together.
  • Pour the mixture into the Christmas tree mould.
  • Cover with foil and freeze overnight.
  • Peel back the mould and turn out the Christmas tree onto a serving plate.
  • Refreeze until outside of the pudding is solid.
  • Whip cream until firm and cover pudding with cream as if you are icing the pudding.
  • Place a Jaffa on each branch of the tree.
  • Refreeze until ready to eat.
