Steamed Chicken and Mango Salad

What you will need:

3 Chicken Breast Fillets
Black Pepper
Sweet Paprika
1 large mango, peeled and sliced
1 cup mint leaves
1 cup coriander leaves
1 small red onion, thinly sliced
3 spring onions (shallots), thinly sliced
1 Lebanese Cucumber, cubed
50g cashews, toasted and roughly chopped
1 cup mesculin


2 tablespoons lime juice
2 tablespoons lemon juice
2 tablespoons sweet chilli sauce
1 tablespoon fish sauce
1 tablespoon palm sugar

Steamed Chicken and Mango Salad

How to make it:

Brush chicken lightly with oil, and sprinkle with pepper and paprika.

Sear chicken in a hot pan, then place in a solid steel tray.

Place in Kleenmaid Combi Steam Oven SO4510 and steam 100oC for 16 minutes or until chicken is cooked. Cover with foil to rest for 5 minutes.

Place prepared salad ingredients and mango into a large bowl and toss to combine.

Arrange salad on serving platter. Slice chicken and place over salad.

Place Dressing ingredients in a screw top jar and shake to combine.

Drizzle salad with Dressing just prior to serving. Scatter cashews over the top.
